Supplier Spotlight: Certified Piedmontese

At Hopdoddy, we’re those people who expect to know exactly where our meat comes from. We want insight into everything, from the kind of life that the animal led to the values of the people who raised that animal and then processed and distributed the meat. In our minds, and confirmed by our taste buds, every step of that process matters. We dive into these details so that our customers can rest assured that they’re consuming delicious, ethically sourced meat.

After an exhaustive search, we were ecstatic to launch our new partnership with Certified Piedmontese in September 2020. Every single burger made with ground beef at Hopdoddy Burger Bar is now made with this farm-to-table meat.

Certified Piedmontese, based in Nebraska, responsibly raises cattle on family ranches throughout the Midwest to provide a healthier beef option that’s still incredibly flavorful and tender. Without antibiotics, steroids, or hormones, you don’t have to worry about any questionable additives in your beef. What you taste is what you get.

What’s so great about Piedmontese beef

Piedmontese is a breed of cattle that’s known for its heavy musculature and unique genetic makeup. This allows for the cattle to develop a greater muscle mass than conventional cattle. Ultimately, you end up with beef that has less fat and fewer calories, while also providing higher protein per ounce than other breeds. For context, Certified Piedmontese beef has fewer calories than salmon, ounce-for-ounce. So, we get to benefit from this healthier beef, all without sacrificing tenderness and flavor.

Their people and values really sealed the deal

Not only were we excited to begin serving burgers with this higher-quality beef, but we were also drawn to forming a relationship with a beef purveyor that shares so many of the values that are core to Hopdoddy’s operations. For instance, Certified Piedmontese upholds progressive ranching protocols, using DNA testing to confirm the cattle’s heritage and voluntary third-party audits that hold them accountable for handling and quality. Their source-verified, ranch-to-table approach further ensures traceability and works towards environmental sustainability.

Meeting the people who work with and for Piedmontese Beef, from the managers to the farmers, solidified what we already felt to be true: these were individuals who cared greatly about what they do and take great pride in providing high-quality beef that’s safe and healthy to consume.
